Ingredients

  • 1 ripe avocado, pitted and cubed
  • 1 serrano pepper, hulled, seeded and chopped
  • 60 ml (1/4 cup) fresh coriander
  • 60 mL (1/4 cup) sweet onions, finely chopped
  • 30 ml (2 tablespoons) mayonnaise
  • 3 mL (1/2 teaspoon) salt or more, to taste
  • 15 mL (1 tablespoon) lime juice or more, to taste
  • 45 ml (3 tablespoons) water (approx.)

  • Place the avocado, chili pepper, cilantro, onion, mayonnaise and salt in the bowl of the food processor.
  • Pulse a few strokes until smooth.
  • Add the lime juice and enough water to obtain a thick sauce that remains quite liquid.

  • 3 files

  • 1 jalapeño emptied and cut into small cubes
  • 4 diced tomatoes (1 seeded)
  • 1 chopped cilantro head (leaves only) (keep as garnish)
  • 1 Vidalia onion grilled on the BBQ
  • 1 clove of candied garlic roasted on the barbecue
  • Olive oil

VARIANT - GUACAMOLE WITH BLUE CHEESE

  • 65 mL (1/4 cup) crumbled blue cheese
  • Juice of a lime
  • Coriander

VARIANT - GUACAMOLE WITH PUMPKIN SEEDS AND POMEGRANATE

  • 1/2 seeded pomegranate
  • 250 ml (1 cup) toasted pumpkin seeds
  • 1 lime caviar

Preparation

  • Heat the bbq to 600°F.
  • Place the clove of garlic confit and the finely chopped onion on a piece of aluminum foil with a drizzle of oil. Cook for 10 minutes on the bbq with regular supervision.
  • In a large bowl, mash the avocados with the lemon juice. Leave 2-3 avocado pits in the bowl to prevent the purée from browning. Set aside.
  • Prepare all the other ingredients for the guacamole. Add the jalapeño, coriander, tomatoes, red onion, olive oil, salt and pepper.
  • Serve with homemade chips!

  • 2 bunches of asparagus, trimmed
  • 50 g (2 oz) fresh goat cheese

  • Salt and pepper

Preparation

  • Plunge the asparagus into boiling salted water and cook for 8 minutes.
